Brazilian Black Bean Stew

The Brazilian National Dish is called Feijoada. It is basically a stew, and here I bring a vegan version of the Feijoada. It has black beans and sweet potatoes and loads of other nourishing ingredients. It is low fat and has great Caribbean flavors in it.

Here’s how to make it in your own kitchen –

Ingredients:

1 tbsp vegetable oil

1 large onion, chopped

2 medium cloves of garlic, minced

2 medium sweet potatoes, peeled and diced

1 large red bell pepper, diced

2 medium tomatoes, diced

1 small hot green chili pepper, or more if you like it spicier

900g of black beans, boiled, drained and rinsed

1 ripe mango, pitted, peeled and diced

1/4 cup chopped fresh cilantro

1/4 tsp salt
